I had the pleasure to work with Italian Master Chef Luciano Parolari “the King of Risotto” in support of the L5 foundation in Knoxville Tennessee. L5 helps cancer patients obtain household necessities while undergoing treatment. This years event raised over 65k in charity support. The event had a span of 4 nights with the highlighted dinner for 150 people ending the week. Chefs involved were: Michael Sullivan of Creekstone Beef, Josh Tomaski from Hillwood C.C., David Pickney from Cherokee C.C., Aaron Sworsky, Kevin Greene and Tyler White from UT. Working with a lifelong chef like Luciano was rewarding. It was great to share the culinary passion with a master chef, the same passion that we both have dedicated our entire lives to. Michael Sullivan and I have been friends for over a year, his knowledge of butchery and charcuterie has had him voted #1 butcher in America by his peers. Michael “the reverend of pork” has energy and passion second to none in the business. Working with my long time colleagues David Pickney and Josh Tomaski capped off a brilliant week of culinary comradery and friendship.
